Tagatose is easy to crystallize, and has low hygroscopicity, but strong moisture retention, which helps its stability in food processing. The sweetness of D-tagatose is about 92% sucrose, but the calories it produces are only 1/3 of sucrose, making it suitable for use as a low-calorie sweetener.
Tagatose sweetener of HSF is made from lactose, which is hydrolyzed to obtain galactose, and then treated with isomerase to convert the galactose into ketone-containing six-carbon hexose.
